“Compared to when I grew up in Needham, there was a significant void of everyday American food. When I grew up here we had a Ground Round, a Brigham’s, a Friendly’s, etc. Not to knock any of the restaurants in town, we have wonderful places in town, but I make contemporary renditions of classic American dishes,” said Krug, who both owns the restaurant and works as its executive chef. “Before I set up, there was really nowhere in Needham where you could get a nice piece of fish, a great burger and nice pasta dishes all in one place.”
Krug was raised in Needham and left to study music and business at Ithaca College in upstate New York. After graduating college in 1993 he played in a rock and roll band called Acoustic Junction and toured around the world with professional musicians. He eventually left the entertainment industry and moved to Boston in 1999 to get his MBA at Northeastern University. While he was at school he taught himself how to cook in his spare time; later on, when he moved to the suburbs and got married, he continued to cook as a hobby. It wasn’t until four years ago that Krug took the risk to start his own restaurant.
“This is the kind of place where parents can bring their kids to eat that everyone can agree on,” Krug said.
The most popular breakfast item is the craftable omelette made with farm fresh eggs, though Krug recommends the new Super Awesome Crunchy Delicious Amazing French Toast.
For lunch and dinner burgers reign supreme, made with prime angus beef, fresh brioche buns and a wide array of toppings. Traditional toppings are present, like cherrywood smoked bacon and blue cheese, but so are the unconventional toppings, like black truffles and whipped bone marrow.
Krug is particularly proud of his blackened salmon, which comes with a side of buttered green beans and fluffy mashed potatoes. The smoky, yet mild salmon filet artfully blends salty and tangy flavors while it melts in the mouth.
Every dish on the menu can be prepared for customers with gluten-free diets, and there are numerous dishes that cater to vegetarians and vegans.
In addition to food and cocktails, Three Squares hosts live music every Thursday, Friday and Saturday night from 7 p.m. to 10 p.m, featuring mainly Blues and Jazz artists.
